Filleman House: A New Chapter for Chef Diego Galicia Chef Diego Galicia, co-founder of San Antonio’s first Michelin-starred restaurant, Mixtli, is stepping into a bold new venture with the opening of Filleman House. This upcoming eatery marks a significant departure from his previous culinary concept, offering a more casual, inclusive dining experience tailored to his personal tastes and global influences. The restaurant, set to debut in late November, will occupy the historic former Restaurant Claudine space on Grayson Street, a location Galicia described as practically falling into his lap. The project began with the acquisition of the 1910-era home, which Galicia plans to restore while incorporating modern touches. The venue’s original aesthetic will be preserved, with renovations focusing on its historic character. A standout feature will be a newly constructed bar, designed by Mixtli’s bar director, Lauren Beckman, who recently won the Michelin Guide Texas Service Award in 2024. Beckman’s expertise will shape the bar’s program, blending classic and contemporary elements. At the heart of Filleman House is Galicia’s vision of a welcoming space where diners can enjoy food without judgment. The menu, he explained, reflects his personal preferences and travels, featuring a diverse array of dishes such as crab, oysters, foie gras, caviar, steaks, burgers, and pasta. “It’s just a collection of things I like to eat,” Galicia said, emphasizing the restaurant’s broad appeal. He highlighted that the menu is designed to cater to a wide range of tastes, from casual bites to refined offerings. Galicia’s approach to inclusivity is central to the restaurant’s identity. He expressed frustration with establishments that inadvertently exclude patrons based on cultural background or appearance.#san_antonio #diego_galicia #mixtli #lauren_beckman #grayson_street
